When it comes to Northern Croatian cuisine, one sweet dish that stands out as both a regional delight and a symbol of cultural richness is Međimurska Gibanica. This mouthwatering pastry, adored by many Croatians, hailing from the picturesque Međimurje region in the northern part of Croatia and nearby Prekmurje region in Slovenia, is a culinary masterpiece that embodies both countrys' history, tradition, and exquisite flavours.

Međimurska Gibanica is a layered pastry that showcases the exquisite artistry of baking. Its name, "gibanica," is derived from the verb "gibati," which means "to move" or "to shift." Thname describes the layers of the pastry that seem to shift very different flavors and textures between parts. This beloved pastry has a history that dates back centuries. Međimurje, known for its fertile fields and vineyards, has been the home of various cultural influences over the years, including Hungarian, Austrian, and Slovenian. Međimurska Gibanica reflects that particular tapestry of influences.
