Soups and stews are on the menu in Slovenia quite often - we call them »jedi na žlico« (»food on the spoon«) and are a reflection of the country's history, tradition and regional variations, from the robust flavors of Jota to the medley of meats in Bograč, each soup tells a unique story. Today let's have a look at what are the most popular »on the spoon« dishes you should try at the time of your mobility program in Slovenia.

Golaž - A Spicy Stew with Paprika Punch: Golaž, a dish with Hungarian origins, has become a beloved part of Slovene cuisine, particularly in the northeastern regions. This spicy stew features tender meat, often beef or pork, slow-cooked with an abundance of onions and tomatoes. What sets Slovene Golaž apart is the generous use of paprika, infusing the dish with a rich, smoky flavor. Served with a side of hearty bread or pasta, Golaž is a comforting and robust dish that warms both the body and soul.

Ričet - Barley and Vegetable Comfort in a Bowl: Ričet is a hearty barley soup that encapsulates the essence of Slovene comfort food. Hailing from the countryside, this dish combines barley with a medley of root vegetables, beans, and smoked pork, creating a wholesome and satisfying meal. The slow simmering of ingredients allows the flavors to meld, resulting in a thick and nourishing soup. Ričet is a perfect representation of Slovenia's commitment to using locally sourced, seasonal produce to create dishes that provide warmth, particularly during the colder months.

Telečja Obara - Veal Stew with a Medley of Vegetables: Telečja Obara, a traditional Slovene veal stew, showcases the country's dedication to combining high-quality meats with an abundance of fresh vegetables. In this dish, tender veal is simmered alongside carrots, potatoes, peas, and other seasonal vegetables, creating a harmonious blend of flavors and textures. The broth is enriched with a light roux, adding a velvety touch to the stew. Often seasoned with herbs like marjoram and thyme, Telečja Obara is a delightful celebration of simplicity and balance in Slovene culinary heritage.

Jota - The Hearty Bean and Sauerkraut Soup: One of Slovenia's most iconic soups is Jota, a hearty and warming dish that originated in the mountainous regions. This thick soup features a base of beans, potatoes, onions, garlic, and smoked pork, all simmered for a few hours. What sets Jota apart is the addition of sauerkraut, which imparts a tangy flavor, creating a delightful contrast with the rich, savory broth.

Bograč - A Stew-like Soup with a Hungarian Twist: Bograč, while considered a stew by some, is often enjoyed as a soup in Slovenia. This dish has Hungarian roots but has found its unique interpretation in Slovene cuisine. It typically includes a medley of meats, such as pork, beef, and game, combined with an array of vegetables like peppers, onions, and tomatoes. The secret lies in the blend of spices and paprika, giving Bograč its distinctive flavor.

Pasulj, a dish with Serbian roots, has found a welcoming place in Slovene kitchens, showcasing the cross-cultural influences that enrich the country's culinary landscape. This hearty bean soup features white beans slow-cooked to perfection with a medley of ingredients, including onions, garlic, smoked meats, and often a hint of paprika. The result is a robust and flavorful stew. Pasulj has seamlessly integrated into Slovene gastronomy, offering a delicious testament to the shared culinary heritage within the region. Whether enjoyed on its own or paired with crusty bread, Pasulj stands as a savory reminder of the cultural connections that make Slovenia's food scene diverse and vibrant.
