Norwegian Desserts and Sweets

The Norwegian cuisine is perhaps best known for its traditional main dishes and hearty ingredients, but the country also has a rich culture of sweets and desserts. Many of these recipes have roots in holidays and festive occasions, while others have developed as everyday treats in the kitchen. Here are some of the most distinctive and beloved Norwegian sweets.

Kransekake (almond cake)
Kransekake is one of the most iconic Norwegian celebration cakes. It consists of rings made from almond paste, stacked into a tall tower and often decorated with icing and small flags. Kransekake is typically served at weddings, confirmations, and New Year’s, and is therefore associated with festivity and celebration.

Rullekake (Swiss Roll)
Rullekake is a simple but popular classic. It is made from a thin sponge cake spread with jam or cream before being rolled up. The cake is easy to make and has long been a staple in many Norwegian homes as a coffee cake or everyday dessert.

Svele
Svele is a thick, soft cake similar to pancakes, but with a lighter and fluffier texture. It is often served with butter and sugar, brown cheese, or jam. Sveler are especially famous from the ferries along the western coast of Norway, where they have practically achieved the status of a travel tradition.

Waffles
Norwegian waffles are thin and heart-shaped, often served with sour cream and jam, brown cheese, or sugar. They are considered almost a national sweet and are a regular part of everyday comfort and social gatherings. Waffles are often associated with community events, kiosks, and coffee tables across the country.

Tilslørte Bondepiker ("Veiled Farm Girls")
Tilslørte bondepiker is a traditional layered dessert made with apple sauce, breadcrumbs fried in butter and sugar, and whipped cream. It is both simple and flavorful, and has been a favorite on Norwegian dessert tables for generations.

Caramel Pudding
Caramel pudding is a classic celebration dessert made from eggs, milk, and sugar, topped with a layer of caramel sauce. It has a creamy consistency and a mild, sweet flavor that makes it a safe winner at Christmas and other special occasions.

Cloudberry Cream
Cloudberry cream is inseparably linked to Norwegian Christmas traditions. It is made from whipped cream mixed with cloudberries, a type of berry that grows wild in the mountains and marshlands. With its rich taste and exclusive ingredient, cloudberry cream is considered one of the most distinctively Norwegian desserts.
