It's Easter-time!
In Malta this means... figolla time! Just as a reminder, a figolla is a traditional Easter pastry, usually made in the shape of a lamb, rabbit, hearts or fish (recently more unusual shapes and designs - football club shields or cartoon characters have also started surfacing).

As a reminder you'll need:
- 500g plain flour
- 200g caster sugar
- 200g unsalted butter, softened
- 4 egg yolks
- 2 tsp baking powder
- zest of 1 lemon
- 1 tsp vanilla extract
- 2 tbsp milk
- 1 egg yolk, beaten (for brushing)
For the filling:
- 250g almond meal
- 200g caster sugar
- 2 egg whites
- 2 tbsp orange blossom water
- 1 lemon, juiced
- 1 egg white, beaten (for brushing)
