How to Make Shepherd's Pie: A Traditional Irish Recipe


Shepherd’s Pie, known in Irish as Pióg an Aoire, is a beloved comfort food that traces its roots back to the farms of Ireland. This hearty dish combines minced meat, typically lamb, under a crusty layer of mashed potatoes, and is perfect for any occasion, especially during the colder months.

Ingredients:

1 lb ground lamb (uan talún)

1 onion, finely chopped (oinniún, mionghearrtha)

2 carrots, diced (cairéad, ciúbach)

2 cloves garlic, minced (clóibh gairleog, mionghearrtha)

1 cup peas (piseanna)

1 cup beef broth (brat mairteola)

2 tbsp tomato paste (spúnóg bhoird greamaigh trátaí)

1 tbsp Worcestershire sauce (anlann Worcestershire)

Salt and pepper to taste (Salann agus piobar chun blas a chur air)

2 lbs potatoes, peeled and quartered (prátaí, scafa agus roinnte ina gceathrúna)

4 tbsp butter (im)

1/2 cup milk (bainne)


Method:

Preheat your oven to 400°F (200°C).

In a large skillet, cook the ground lamb until it is brown. Remove the lamb, and in the same skillet, add onions, carrots, and garlic. Cook until they are soft.

Return the lamb to the skillet, add peas, broth, tomato paste, and Worcestershire sauce. Season with salt and pepper. Simmer for about 10 minutes until everything is well combined.

Meanwhile, boil the potatoes until tender. Drain and mash with butter and milk until smooth.

Spread the lamb mixture in a baking dish, then layer the mashed potatoes on top. Rough up the surface with a fork to create peaks that will brown nicely.

Bake for about 20 minutes or until the top is golden and crispy.
